Todd Birnbaum

Todd Birnbaum

Todd Birnbaum most recently worked for Ark Restaurants (Nasdaq: ARKR), a publicly traded, 30 unit restaurant group. As Director of East Coast Operations and Development, Todd planned, built, operated, and improved full service restaurants, quick serve outlets and catering operations. Todd handled responsibilities as diverse as data security, health care compliance, data analytics and customer service, while also working on restaurant P & L’s, labor strategies and cost reductions.

Prior to working with Ark, Todd owned and operated a restaurant on Park Avenue South, called PINCH – Pizza by the Inch. Pinch was way ahead of its time, serving A+ food in a fast casual setting and at approachable prices. 3 foot long pizzas were served along with fresh made pastas and salads. The restaurant generated sales of $1250 per square foot prior to the demolition of the building.

Prior to opening PINCH, Todd worked every job one could in a restaurant, from dish pit to controller. Todd worked as a GM and multi-unit manager for John’s Pizzeria, while simultaneously working as a restaurant controller and promoting nightclubs on the weekends. He has worked in bakeries, pizzerias, bars, restaurants and other retail outlets all of his life. Todd is a skilled cook, mixologist and his culinary based travels (Montreal, Austin, San Francisco, Uruguay, Italy to name a few) have informed his pallet. Todd has a degree from The University of Michigan in Organizational Studies (1998).

Todd lives in Port Washington, NY with his wife Kimberly and two children, Myles (5) and Alexandra (8).
